Jam-Filled Muffins: The Hidden Center Technique

A jam-filled muffin is pure joy. The outer muffin looks completely normal. Then you bite into it and find a hidden pocket of raspberry jam, lemon curd, or peanut butter at the very center. Here's how it's done.
Method 1: The Skewer Fill (During Baking)
- Fill each muffin cup two-thirds full with batter.
- Using a spoon or piping bag, add 1 tsp of jam to the exact center of each cup.
- Cover with remaining batter, filling to ¾ full.
- Bake normally. The jam stays suspended in the center as the batter rises around it.
Method 2: The Core & Fill (After Baking)
- Bake your muffins completely and let cool fully.
- Using a cupcake corer, apple corer, or ½-inch round piping tip, press straight down into the muffin center to a depth of about 1 inch. Twist slightly and remove the plug.
- Fill the hole with jam using a small spoon or piping bag fitted with a round tip. Fill to just below the surface.
- Replace the muffin plug on top and press gently. The cap hides the fill completely.
- Optional: dust the top with powdered sugar for a clean, bakery finish.
