Autumn is the best baking season. The flavors — pumpkin, apple, brown butter, warm spice — practically decorate themselves. Here are three fall muffin ideas that fully embrace the season.
1. Pumpkin Spice with Pepita Crown
Bake your favorite pumpkin spice muffin. Before baking, press a small cluster of pepitas (pumpkin seeds) into the center of each muffin top. Brush with an egg wash, then scatter a pinch of brown sugar and a tiny pinch of flaky salt over the top. The seeds create an artisanal crown; the caramelized brown sugar gives the whole top a golden sheen.
2. Apple Harvest with Cinnamon Streusel Crust
Make a classic apple muffin batter with diced fresh apple folded in. Top each cup with a generous heap of oat-cinnamon streusel (see our streusel guide). Press one thin apple slice standing upright into the streusel just before baking — it fans out as the muffin rises and creates a stunning overlapping fan of caramelized apple on top.
3. Spiced Brown Sugar Muffin with Maple Drizzle
Bake a brown sugar–spiced muffin base (ginger, cinnamon, cardamom, clove). Let cool fully. Whisk 1 tbsp pure maple syrup into a thin powdered sugar glaze. Drizzle in a loose crosshatch pattern over each muffin. Add a single candied walnut or pecan half to the center for a jewel-like finishing touch.
Seasonal Color Note
For fall muffins, the natural colors — amber, burnt orange, warm brown — are their own decoration. Resist the urge to add artificial food coloring. Let the caramelization, spices, and natural fruit coloring do the visual work.
