Mini Muffins Batch Day Recipe
The ultimate meal prep. Bake 48 mini muffins in one session using two 24-cup Bake Boss pans and freeze for weeks of grab-and-go breakfasts.
Ingredients (makes 48)
- 4 cups all-purpose flour
- 1.5 cups sugar
- 5 teaspoons baking powder
- 1 teaspoon salt
- 4 large eggs
- 2 cups milk
- 8 tablespoons melted butter
- 4 cups mixed mix-ins (blueberries, chocolate chips, etc.)
Instructions
- Preheat to 375°F.
- Mix all dry ingredients.
- Whisk eggs, milk, butter.
- Combine wet and dry until just mixed.
- Fold in mix-ins.
- Fill both 24-cup pans evenly.
- Bake 18-20 minutes until golden.
Efficiency Hack

Freezing
